Essalam Alaikum Sakinah, nice to meet you and Ramadan Mubarak! Poolish-- Is French for a mixture of flour and water and a littlebakers yeast. The ratio of flour to water is 50 - 50 by weight.After you mix the ingredients you let it sit at room temp for 5 hours then refrigerate it overnight. When you are ready to use it and bring it room temp for at least one hour. Make sure you put it into a container that will allow it to double and grow so you don't have a huge mess. :-)
