Apricot Semolina Cake or Basbousa



Batter:
2 eggs (I used 4, but then made the cake again and used 2, 2 tastes better!)
1 cup apricot yogurt, or vanilla, or any flavor that suits your fancy
1 1/2 cup large semolina
1 cup flour
2 tbs baking soda
1/2 cup canola oil or melted butter or melted margarine
orange zest from one orange (leaving out next time, didn't mix well with the apricot)
1/4 but now am thinking it should have been 1/2 cup sugar
pinch of salt

Syrup:
4 cups water
2 cups sugar
orange flower water


Syrup:
The syrup should not be boiling hot when the cake is done so start off making that first.
Add sugar and water together, boil for about twenty minutes.
Add orange flower water and set the syrup into the fridge.






Batter:
Whip together all of the wet ingredients.


Add the dry ingredients and stir until well combined.
Butter a baking dish and add the batter.



Cook in a 350 degree preheated oven until golden brown, about 30-45 minutes.



Pour cooled syrup on top.



Set aside for at least 30 minutes.
Cut into desired shapes.



Serve with coffee or tea.

    I would love this cake and as my dh is algerian i'm guessing he would too, i've made a similar cake before called qalb el louz (heart of almond) have you tried it? famous in ramadan in the boumerdes area.
