Okra Stew

This is a really simple vegetarian dish.

1 chopped medium tomato
1 chopped medium onion
4 grated cloves of garlic
1/8 cup olive oil
1 tbs tomato paste
salt to taste
pepper to taste
2 ts coriander
2 ts paprika
1 small head of cauliflower
2 cups or one small bag of frozen baby okra
3 medium potato cut into chunks

Saute the garlic, onion, tomato and spices until soft and a bit carmalized.

Add two cups of water, okra, cauliflower and potatoes.

Pressure cook it all together for 10 minutes.

Serve hot as a side or main dish.
