Orange Olive Oil Cake


I really enjoy this cake, it's simple enough to put together in a pinch, tasty enough for dinner parties but humble enough to go well as an afternoon treat or for a special breakfast.

1-1/2 cups unbleached all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3 large eggs
1 cup sugar
3/4 cup plain whole-milk yogurt
3/4 cup extra-virgin olive
2 teaspoon orange extract
1 teaspoon vanilla extract

Preheat the oven to 325.
Lightly oil cake pan, today I used a bundt pan, but any pan will do.
Whisk together the dry ingredients. Set aside.
Beat the extracts, eggs and sugar in a large bowl until pale and thick.


Add yogurt beat to combine.


Add oil in a quick, steady stream.


Add flour mixture just until blended.



Make sure that all ingredients are incorporated.


Pour batter into oiled pan.


Bake until cake is golden, center springs back to the touch, and edges pull away from pan, 40 to 45 minutes, depending of course on the pan you use and the temperature of your particular oven.


Let cool in pan for a minute or two then turn it out onto a rack.


Let it finish cooling then slice and serve with tea or coffee.

    I have always tried to stay away from recipes using olive oil, does the cake come out (not too dry?)..
    if so, I might attempt making one with your recipe :)..thanks

  4. Salaams Moon, The cake is very moise (if you don't over bake it that is ;-)

    Umm Imran, Thanks sis! You could use canola oil for sure (it would make for a more pound cakish kinda cake). That's not something I have tried so if you do let me know how it tastes. =D

  6. I love cakes with olive oil. This one looks so simple and delicious. This might be late but mabruk on your new baby. How on earth do you find the time to post, let alone bake? Masha'allah
