White Bean Chili

I know it's practically summer, but why  not? This is my white vegetarian chili recipe, we all really love it around it.

1 bag of small white beans
2 stalks chopped celery
2 small carrots chopped
1 tomato chopped
1 green pepper chopped
bunch of fresh parsley or cilantro chopped
1 large onion chopped
1 head of garlic chopped
olive oil
pepper to taste
salt to taste
cumin to taste
paprika to taste
hot pepper to taste
1 small can of tomato paste

Saute the veggies in olive oil then add the uncooked dried beans and 6-8 cups of water or broth and the tomato paste.
Bring to a boil and pressure cook for an hour or until the thickness to your liking is achieved.
Garnish with copped herbs.Serve with cornbread or alone. We eat ours with any bread available ;-D
