Asparagus & Cheese Bake

2 bundles of asparagus cut into two inch pieces
1 lb of ground beef or lamb (optional)
2 tomatoes sliced
1 large onion sliced
1 head of garlic crushed and roughly chopped
2 cups cheddar cheese
6 eggs
1 cup milk
salt and pepper to taste

Steam the asparagus, salt and pepper them.

Cook the onions and tomatoes with olive oil on medium high heat until caramelized. Add the garlic
last so it doesn't burn. Salt and pepper to taste.

Transfer the onion, tomatoes and garlic to your baking pan, this is another recipe that I use my cast iron with. Brown the meat if using.

Beat the eggs with the milk and half of the cheese.
Layer the veggies and meat then dump on the eggs. Add the rest of the cheese on top.
Bake in a 400 oven for about 35 minutes.
