Okra Stew

I have finally found a desire to eat Okra. I hated it for years, but now, I like it. Here is a pretty easy and quite flavorful recipe to make.

1 chicken breast diced
1 bag from baby okra
1 chopped large onion
1 chopped head of garlic
1 chopped tomato
4 potatoes peeled and quartered
handful of chopped cilantro
salt to taste
pepper to taste
hot paprika to taste
1 tbs cumin
1/8 cup olive oil

In a large pot on medium high heat the olive oil. Add the onions and garlic and saute until browned.

Add the chicken and spices. Cook until the chicken is browned. Add the tomatoes and cook them until soft.

Add the okra and potatoes, cover and let it simmer on low heat until everything is soft. The vegetables have lots of water, so don't add anymore. Garnish with cilantro.


 Serve with a homemade fresh bread and a green salad!
