Pear Cake

3/4 cup olive oil or regular oil
1 1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup brown sugar
1/2 cup sugar
2 large eggs
1 teaspoon vanilla extract
2 teaspoons almond extract
1/3 cup ricotta cheese
1-2 pears sliced, or any other fruit you may have on hand like plums, apples, figs or peaches

Preheat oven to 350. Butter or spray a cake pan.
Whisk together the dry ingredients, set aside. Beat together the oil and sugars.
Beat in eggs, one at a time, until incorporated; beat in the extracts.
Beat in 1/2 the flour, then add the ricotta. Add remaining flour mixture; mix until just combined.

Spread batter into pan and smooth top with the back of a spoon or spatula. Arrange the fruit over the batter. Bake until cake is golden, about 60 minutes.

The cake should easily slip right out of the pan and then onto a plate to cool completely before cutting.
