Plum Cake

Summer time is the best time for fruit cakes! Not dried out Christmas fruit cakes that everyone secretly hates but always gives as gifts, but fresh fruits baked into cakes!
3 eggs, separated
1/2 cup butter at room temp
1/2 cup sugar
1 cup all flour
1/2 ts baking powder
1 ts lemon extract
1 ts vanilla extract
4-5 plums sliced in half

Preheat oven to 375. Spray or grease and flour a cake pan, round, square or oblong all work great.   
Whisk together the dry ingredients.            
Beat the egg whites until stiff peaks form, and set aside. 

Cream the butter and sugar. Beat in the egg yolks and extracts. 

Add the flour mixture to the butter mixture. 

It's a fairly thick batter, don't worry, it's supposed to be like this.
Gently fold in the egg whites. 

Spread the batter evenly into the prepared pan using the back of a spoon.
Arrange the plums, skin side up, attractively over the batter.  

Bake for 35-40 minutes or until a butter knife inserted into cake comes out clean (minus the plum juice of course.)
Let the cake cool then slice and serve with tea or coffee. This is also a nice breakfast.
