2 cups unbleached flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/3 cup oil or melted butter
1 cup fresh berries
1/2 cup slivered almonds
Preheat oven to 350 and spray or flour and butter a cake pan. This can easily be turned into a muffin recipe as well, just use a muffin pan instead and cut the baking time a bit.
Whisk to combine the dry ingredients.
Whisk the wet ingredients and gently stir it into the dry ingredients.
Gently fold in berries, they may bleed some. Spoon the batter into the cake pan, even it out with the back of a spoon. Sprinkle with the almonds.
Bake for 40-45 minutes, a toothpick inserted in the middle will come out clean, except for the berry juice of course. Cook for 25-30 minutes if using a muffin pan. Turn out onto a cooling rack immediately.
Serve warm or cold for breakfast, tea or snacks!
